Sustainable Nutrition And Catering Settings
Wherever food options are presented, be it in a company’s cafeteria or a local supermarket, for example, nudging can be the key to a better decision. How? On June 22, 2023, NudgeNight 2023 took place and we presented seven environmental interventions that can make food preferences more sustainable and healthy.

SNACS Well-Nudged

Complex decisions face us every day. When it comes to our nutrition choices, most of us know what a healthy and sustainable food option looks like. But can we make the sustainable alternative more appealing by making changes to the setting in which the decision is made?

Backed up by insights from behavioral science, we at Hamm-Lippstadt University of Applied Sciences say: definitely!
Behavioral research shows that situational factors could have a significant effect on our food preferences. How convenient a product is placed, how attractive the label is, or even in what order options are presented to us are all examples of context-based specifics with the potential to „nudge“ us towards a better decision.

Our keynote speaker

dr.ir. Ellen van Kleef

Ellen van Kleef has a Master’s degree in Nutrition and Health, but her main interest has always been the “why” of food choices and the psychology behind them. Accordingly, she did her doctorate in marketing and consumer sciences. It quickly became clear that the environment in which consumers make decisions is very important. After 2008, Thaler and Sunstein’s book Nudge became a source of inspiration for her to translate knowledge about consumer decision-making processes into actionable interventions in real decision-making environments. Since then, she has done a lot of research in restaurants, schools, canteens and shops, also with students.
